Ingredients
- 2 potatoes
- 1 zucchini, diced
- 1 red bell pepper, diced
- 1 onion, diced
- 2 glasses of water
- Breadcrumbs to taste
- salt and pepper to taste
Preparation
- To start, wash the potatoes, put them in a pot with water, turn on the stove and boil them so that they become nice and soft.
- In the meantime, transfer the zucchini, pepper and onion to a non-stick pan with a drizzle of oil, then let everything cook.
- Now add 2 glasses of water, salt and pepper and continue cooking for 30 minutes, so that the vegetables soften.
- Now drain the potatoes, peel them, roughly cut them into pieces in a bowl, season with oil, salt, breadcrumbs and pepper and mash them with a fork until you get a mixture with a homogeneous consistency.
- Once this is done, incorporate the vegetables, knead using your hands and shape your cutlets, which are then dipped in breadcrumbs and placed in a drip pan previously lined with special oiled paper.
- Finally, bake in a preheated oven for 30 minutes at a temperature of 190°C, when there are 5 minutes left, turn on the grill mode to brown properly. Once ready, bring to the table while still hot.
