Walnut and oat muffins

Ingredients

We will need:

  • Walnuts to taste
  • 150 grams of rolled oats
  • 150 grams of flour
  • 10 grams of baking powder
  • 2 grams of cinnamon
  • 1 g nutmeg
  • a pinch of salt.
  • 2 eggs.
  • 70 grams of stevia
  • 90 ml vegetable oil
  • 100 ml milk
  • 500 grams of apples
  • zest of 1 lemon.
  • a little lemon juice.
  • Seed oil

Preparation

Take 150 grams of rolled oats and pour them into a large bowl. Then add 150 grams of flour, 10 grams of baking powder, 2 grams of cinnamon, one of nutmeg and a pinch of salt, then mix everything with a hand whisk.

Peel and pour the kernels into a new bowl, then chop them with a knife and then pour them into the mixture with the oatmeal and flour. Mix well with a spatula.

Now beat two eggs and 70 grams of stevia with an electric whisk. Pour 90 ml of seed oil and 100 ml of milk into this mixture, then mix again with a whisk.

Now we take the apples, remove the core, peel them and then grate them. Now pour over the mixture with the eggs and mix, after which we pour the grated zest of a lemon and also the juice of the middle.

Now mix again and then mix this mixture with the walnut mixture, adding the latter a little at a time.

Now pour some of this new mixture into the compartments of a muffin tin and bake it in the oven at 180 degrees for 30/35 minutes.

Then pour the rest of the dough into a 20 cm cake pan, greased with oil. Level and put in the oven at 180 degrees for 30/35 minutes.

Now you can sprinkle everything with powdered sugar.
