Hazelnut biscuits: flour-free and yeast-free!
Ingredients
For about twenty biscuits we need:
- – 260 g of hazelnuts
- – 180 g of sugar
- – 2 egg whites
- – a teaspoon of vanilla essence
- To finish:
- – powdered sugar to taste
- – granulated sugar
To decorate:
Nutella to taste
Preparation
The first thing is to lightly beat 2 albums1 with a fork. Now mix 260 grams of toasted and finely chopped hazelnuts with 180 grams of sugar with a spatula.
Now, little by little, incorporate this mix of hazelnuts and sugar with the egg whites. After a while of mixing, add a teaspoon of vanilla extract, then continue to incorporate the hazelnuts and egg whites.
You have to get a sticky but malleable mixture. At this point we take small amounts of dough with our hands, give them a round shape and then dip them first in granulated sugar and then in powdered sugar.
Place them on a baking sheet lined with parchment paper, then with the handle of a wooden spoon make a hole in the center of each one. Well, at this point we bake in a preheated oven at 160 degrees for about twenty minutes.
After 20 minutes, take it out of the oven and let it cool, then soften a little Nutella in the microwave (or in a bain-marie) and pour it into a pastry bag, then with that we fill the holes on our sweets and if we want we can add either chopped hazelnuts or a whole hazelnut.
