Calories: 50 per cookie

Ingredients

  • 240 gr of flour
  • 150 gr of Greek yogurt
  • 60 gr of oil
  • 20 gr of stevia sweetener (or alternatively 40 gr of normal or brown sugar)
  • 1 teaspoon vanillin
  • 1 teaspoon baking powder
  • A pinch of salt

Preparation

  1. To start, turn on and preheat the oven to a temperature of 180°C, then wet and squeeze some parchment paper with which to line a baking sheet.
  2. Now sift and pour the flour into a bowl, then add the sweetener stevia (or sugar), baking powder, vanillin, yogurt, oil and salt.
  3. Then mix everything using a fork, being very careful not to form any lumps in the dough.
  4. Once your mixture has compacted properly, put down your fork, then start kneading with your hands until you get a dough with a homogeneous consistency, which should then be left to rest for 15 minutes in the fridge.
  5. After this period of time, take your dough, flour the work surface and roll it out on top with the help of a rolling pin.
  6. While at the same time sprinkle your stevia sweetener mixture (or sugar).
  7. At this point your dough will be nice and smooth, so cut out 7 parts vertically and 4 horizontally, while the edges will be discarded (use a pizza wheel to remove them).
  8. Finally, place your biscuits in the pan at a certain distance from each other and bake for 15-20 minutes.
  9. Once ready, take them out of the oven and enjoy them while they are still hot.
