Cheese focaccia: just flour, water and milk!

Ingredients

We need:

480 gr of flour
10 gr of dry
yeast 200 ml of hot
milk to taste of sesame
seeds poppy seeds to taste
200 ml of warm water
half a teaspoon of granulated
sugar 90 ml of olive
oil 100 gr of feta or another cheese of the same type
8 gr of salt

Preparation

The dough

In a bowl, combine the warm water and hot milk, then add sugar, oil and dry yeast and mix everything with a hand whisk: the goal is to completely incorporate the yeast.

After a while, add salt and flour and mix with a spoon (wooden spoon if possible) for five minutes. When we have a fairly uniform dough in our hands, seal it with plastic wrap and set it aside for about twenty minutes.

When this dough has increased in volume for leavening, place it on a baking sheet that we have duly greased with a drizzle of oil. We will roll out the dough with our hands, spreading it to cover the entire surface, then cover with plastic wrap and set aside for another 20 minutes.

Assembling and firing

Once the dough has risen again, remove the air that will have formed using the handle of the wooden spoon mentioned above. At this point, roll out the feta cheese on this base, then brush everything with a mix of milk and egg yolk.

Sprinkle with sesame seeds and then put in the oven for twenty minutes at 180 degrees.
