I make it without butter and with 2 eggs! The plumcake is very soft and delicious!

Ingredients

We need:

  • 260 g flour
  • two whole eggs
  • 195 g sugar
  • 220 g raw pumpkin
  • a sachet of baking powder
  • 120 ml seed oil
  • 90 g raisins or chocolate chips (of your choice)
  • 1 pinch of salt
  • powdered sugar to decorate

Preparation

The first thing is to put the raisins in water and rum. Let it soak for a moment and remove the excess flour and continue the recipe.

Now we take the pumpkin and cut it into chunks with a knife, then pour it into the glass of a blender and reduce it to a puree that we pour into a bowl.

Now in a larger bowl, break two whole eggs and blend them with an electric mixer together with 195 grams of granulated sugar. When we have a frothy and light-colored mixture, pour the pureed pumpkin into it. We are still whisking.

Then pour in 120 ml of vegetable oil, always with the mixer running, and add the zest of a lemon as needed. Now add 260 grams of sifted flour and a sachet of baking powder, then season with salt.

Now we take the raisins from the fridge, drain them, grind them and add them to the dough, after which we pour this dough into a loaf pan lined with parchment paper.

Now bake in a static oven at 180 degrees for 40 minutes; or at 170 degrees in a convection oven. Remove from the oven and sprinkle with powdered sugar.
