The recipe for cloud bread pizza, an original and very light recipe

Ingredients
- 50 ml egg white
- 1 egg
- 50 gr of 0% yoghurt
- 50 ml tomato puree
- About 2 gr of Parmesan cheese (which corresponds to 1 teaspoon)
- 1 teaspoon baking powder (baking soda is also fine)
- 2 slices of light cheese or grated mozzarella
- Fresh basil or, if you prefer, oregano
- Salt, pepper and spices to taste according to your personal taste
Preparation
- To start, line a baking tray with parchment paper and preheat the oven to a temperature of 150°C.
- Once this is done, take the egg and divide (in two separate bowls) the yolk from the white, after which the latter must be whipped firmly until stiff.
- Instead, in the bowl of the egg yolk we will add the yogurt, Parmesan cheese, baking powder, salt, pepper and spices, mixing all the ingredients together.
- Once this operation is completed, pour the cream obtained with the yolk very slowly into the bowl of egg white and with a spatula moving from the bottom to the top incorporate the two mixtures.
- Then you have to divide the dough to roll it out in the pan, after which with the help of a spoon as much as possible you will try to give your pizza a circular shape as possible, then we will put it in the oven for 2 minutes.
- After this small amount of time, we take out the pan, take some grated cheese and use it to garnish our pizza.
- At this point, cover and bake everything and let it finish cooking (10 minutes), then after turning off the oven, take out the dough again and pour over it the previously cooked tomato puree and more cheese.
- Finally, put the pizza back in the oven and wait for the cheese to melt completely, then take it out of the oven and add the fresh basil.
