Make your own cream cheese with only 3 ingredients:
Ingredients
● One liter of sheep’s milk;
● An organic sugar-free plain yogurt;
● 1 half an organic lemon.
There is also a vegan version of this recipe. Simply replace the milk with a mixture of coconut milk and almond milk and the yogurt with probiotic capsules.
Utensils
● 1 meter of absorbent cotton gauze (which you can find in the pharmacy);
● 1 jar;
● 1 mold.
Method
● Start by heating the milk in a saucepan for 15 minutes over low heat without bringing it to a boil;
● While the milk is heating, squeeze the juice of half a lemon with a juicer if you have one or with a fork;
● After 15 minutes, remove the milk from the heat and add the natural yogurt and lemon juice a little at a time;
● Stir for a few seconds, then let the mixture sit for at least 3 hours;
● After 3 hours, take your absorbent cotton gauze and fold it back on itself several times before placing it in a saucepan or container;
● Strain the mixture with cheesecloth so that the whey enters the saucepan and only the curd remains. Do not hesitate to press well so that all the whey goes into the pan;
● Put your cotton gauze containing the curd part in another container and put it in the fridge for at least 30 minutes with a weight on top;
● Then take out your cotton cheesecloth and open it to season your cheese with salt if desired, then place it in the mold of your choice;
● Put your cheese back in the fridge in its mold for another 8 hours and you’re done!
