Ingredients:
- 1.5 kg of apples (preferably sweet apples such as Golden Delicious or Fuji)
- Juice of 2 lemons
- 2 teaspoons ground cinnamon
- 1/2 teaspoon nutmeg
- 1/2 cup water
Instructions:
- Prepare the apples: Wash the apples thoroughly under running water. Peel them and remove the seeds. Cut them into cubes of similar size to ensure even cooking.
- Cooking: Put the apple cubes in a large pot together with the water and lemon juice. Turn on the heat over medium heat and bring everything to a boil.
- Add spices: Once the apples have started to simmer, add the cinnamon and nutmeg. Mix well and reduce the heat. Let it simmer for about 30-40 minutes, stirring occasionally, until the apples become soft and turn into a kind of compote.
- Mash the apples: When the apples are soft enough to mash easily with a fork, turn off the heat and use a potato masher or fork to mash the apples until they have a smooth consistency.
- Reduce: Return the pot to the heat over low heat and continue to cook, stirring frequently, until the jam has thickened to the desired consistency. This should take about another 15-20 minutes.
- Cool and store: Once you have reached your desired consistency, remove from heat and allow to cool for a few minutes. Transfer the jam while still hot into sterilized glass jars and seal them tightly. Allow to cool completely to room temperature before storing them in the refrigerator.
