Ostensibly the additive is hygroscopic powder or white granules, and the physical properties of E451 stabilizer are determined by the method of its production. Therefore, the initial mixture is subjected to thermal dehydration, during which anhydrous sodium triphosphate is extracted and then subjected to vacuum crystallization.
In the production of sausages the addition of food stabilizer E451 helps the muscle fiber of meat to accumulate a large amount of water. This is due to a significant increase in the mass ratio of the production of finished products. Thus meat products with E451 added can double their size.
It was observed that when defrosting products to which E451 is added in the composition, a much smaller volume and much worse consistency of the products are obtained. However, despite the many frightening properties and obvious harms of E451 food stabilizer to the human body, today this chemical is present in almost all types of processed sausages and meats.
Harm of Food Stabilizer E451 Triphosphate
With regard to dangerous additives, the food stabilizer E451, when consumed excessively, can provoke the development of the strongest inflammatory processes of the mucous membranes, especially in the organs of the gastrointestinal tract. There are two subtypes of additive E451
E451i- Sodium triphosphate (Tripolyphosphoric acid salt with chemical formula Na 5 P 3 O 10 )
E451ii- Potassium triphosphate (potassium salt of tripolyphosphoric acid as Na 5 P 3 O 10)
Almost all food phosphates and their mixtures, which are used in meat processing and fish industry, contain an alkaline reaction. The addition of alkaline phosphates to meat and fish increases the acidity of products and, as a result, increases the properties of moisture-related proteins.
Tripolyphosphate (added E451) is best for emulsifying fats. The use of E451 above the permissible standard can adversely affect human health. Due to the increased percentage of phosphates in the body, calcium absorption deteriorates, which in turn leads to the deposition of calcium and phosphorus in the kidneys, and contributes to osteoporosis. In addition, an overdose of E451 may cause a person to suffer from an upset stomach.
As a result of several polyphosphate studies, it was found that when using the E451 supplement, mutagenic effects are not observed. Animal studies have also shown that E451 supplementation does not affect reproductive functions, fertility and birth size, as well as offspring growth or survival.

Risk:
Lovers of sausages containing E450 are threatened with impaired calcium absorption, and this will lead to the accumulation of calcium and phosphorus in the kidneys and even osteoporosis.
There is an opinion that E-450 is a cancer-forming substance that promotes an increase in cholesterol.

Article E 451
